Two Eggs a Day Can Keep the Fat Away

There has been a lot of research done over the years regarding the many benefits of eggs. The most popular, is weight loss. Now, I can't see eggs doing much if you eat them with fatty meat, breads and cook it all in butter... BUT! If you cook them in a natural fat source such as olive oil and eat them with vegetables, I can see weight loss happening.
Over the past few weeks, I have been on what is known as a "slow-carb" diet. I have experience a good amount of weight loss. I haven't added in exercise but I have been eating 2 eggs and vegetables (as cooked above) almost every day. I at first thought it was the beans contributing to the weight loss, but I did go about 4 days without eggs and my weight started to creep up a little bit. I ended up gaining about 6lbs. For that reason, I feel it wasn't the beans. I ate 2 eggs again yesterday and once again, weighed myself this morning, and my weight dropped, about 2.5lbs.
I'm not a doctor and I can't really explain this scientifically but for some reason, eating a meal of just 2 eggs and vegetables cooked in olive oil seems to work for me. I will explain what I do to cook them, and I want to see if this works for anyone else.
Keep in mind, I said I changed my diet. I am not eating bread or pasta, Just a few table spoons of wheat germ and crackers and cheese as a snack.
How I cook them:
- Put about 2 table spoons of virgin olive oil in a frying pan and let heat up.
- Add chopped onions (a small hand full)
- Let the onions cook - Bring water to a boil and add in mixed frozen veggies.
- Scramble up two whole eggs with a touch of milk, salt and pepper. - add to onions
- Cook both till done, then EAT!
That's a meal I have been eating every day for the past 3 weeks (minus the 4 days) and I lost about 12lbs. I was up to 16lbs pounds (at only 2 weeks) lost but stopped eating eggs for those few days.

Eggs are actually quite healthy. They have all the nutrients to make a growing chicken. But because they are high in cholesterol, I think average about one egg a day is fine.
Boil or pouch them so you don't have to use oil. When frying them, I fry them in coconut oil.
Coconut oil is much healthier to use as a cooking oil. It is highly saturated, allowing for less mutation of the oil molecule during heating.

As for the eggs, it's an interesting theory. Glad it's working for you.
This is a very accurate article. I started eating 3 eggs for breakfast for 2 months last year and I lost 10 pounds. No effort for me because I absolutely love eggs. Eggs are one of the best foods for curbing appetite as well. I'd eat at 10 am and hunger wouldn't rear it's ugly head until after 5! Awesome hub!
